RAITA

  RAITA INGREDIENTS QUANTITY Plain yoghurt 500 gm Roasted cumin seed powder 5gm Salt TT Black pepper powder dash Chopped cucumber 100gm Chopped onion I no Chopped deseed tomatoes 50gm Chopped coriander leaves 1 tea spoon METHOD:- 1. Mix   all chopped ingredients except coriander leaves. 2. Mix all ingredients in yoghurt and pour into serving dish/bowl 3. Sprinkle roasted cumin powder and chopped coriander leaves 4. Serve c old.  

MATAR PANEER

    MATAR PANEER   SNO INGREDIENTS WT. 1 Paneer 250gm 2 Peas frozen 100gm 3 Oil 70 ml 4 Ginger 10gm 5 Garlic 05gm 6 Tomatoes 600 gm 8 Coriander powder 20gm 9 Red chillies powder 5gm 10 Turmeric powder 4gm 11 Salt TT12 12 Green cardamom 2no 13 Big cardamom  2no 14 Clove 2no 15 Green Dha niya little 16 Chilly green 3no 17 G aram  masala 2gm 18 Cashew nut 40gm METHOD:- 1.          Add oil  in a pot  & add whole masala. 2.       Add  roughly chopped tomatoes,cashew nuts and boil it till cooked. 3.  Puree this mixture and keep aside. 4 .   In a kadhai,add cumin seeds,a dd ginger garlic paste & cook for few second (keep few ginger julienne for garnishes.) 5 .       Add turmeric powder, coriander powder & red chili powder. 6 .       Add pureed  tomatoes cooked till masala is smooth and oil  get seprated on top. 7 .       Add boiled green peas  and cook  till  peas are tender. 8 .       Add fried cube of paneer 9 .      Add g aram  masala , Garnished with Sprinkle chopped green dha

ZARDA PULAO

  ZARDA PUL A O   For Cooking Rice ·  ½  cup  basmati rice ·  enough water for soaking rice ·  5 to 6  cloves ·  ⅛  teaspoon  saffron  or 3 to 4 pinches saffron (kesar) ·  1  cup   water for pressure cooking rice Other Ingredients ·  3  tablespoons  ghee   (clarified butter) ·  ¾  teaspoon  green cardamom powder ·  ½  cup  sugar ·  8  almonds  - chopped or sliced ·  8  cashews  - chopped or sliced ·  8  pistachios  - chopped or sliced ·  10 to 12  raisins  ·  Coconut dry sliced 50 gms.         METHOD ·  Rinse ½ cup basmati rice very well in water till the water runs clear of starch. Then soak basmati rice for 30 minutes in enough water. After 30 minutes drain all the water and keep rice aside. ·  In a 2 litre pressure cooker, pour 1 cup water. ·  Add  saffron strands (3 to 4 pinches). ·  With a spoon stir, so that the saffron strands mix with water. ·  Then add ½ cup rice and 5 to 6 cloves. You can even add 7 to 9 cloves if you want. ·  Pressure cook for 2 whistles or for about 6 to 7

Coconut Rice

  Coconut Rice   SN0 INGREDIENTS WT 1  RICE 300gm 2 COCONUT 150gm 3 South Indian tadka 30gm 4 COCONUT MILK                   5GM 5 Salt Tt 6 Oil 10gm   Method:- 1.wash   and boi l  the rice. 2 Mix it with coconut  and south ind ian  tadka. 3. S erved with hot .

Lemon Rice

  Lemon R ice     SN0 INGREDIENTS WT 1 RICE 300gm 2 Curd 200gm 3 South Indian tadka 30gm 4 Ginger 10gm 5 Salt tt 6 Oil 10gm 7 Lemon 3 no 8 Turmeric 2gm 9 Peanuts /Cashew nuts 60gm Method:- 1.washed   and boil the rice. 2. Take a kadhai add oil , peanuts, ginger, lemon juice and cook for some time. 4. N ow add boil rice in it and cook for 1 min. 3. S erve   with south ind ian  tadka o n top.
