Chicken Fricasse

6 | Chopped parsley | 1\2 bunch |

Method:
1) Sauté cuts of chicken and season with salt and pepper, place butter in a pan and heat gently, add pieces of chicken and cover with a lid
2) Mix in the flour and the stock, bring to boil and skim, allow to simmer gently until cooked.
3) Mix egg yolks and cream in a bowl, take out the chicken in a clear pan, pour a little boiling sauce over the egg yolk mixture and mix properly.
4) Put everything back into the sauce and heat without boiling, correct seasoning, garnish with parsley.
