Chicken Stroganoff

3 | Dry white wine | 125 ml |

5 | Cream | 125 ml |

7 | Oil\butter | As required |
Method:
1) Cut meat into strips, place butter in a pan adds chicken strips and allows cooking rapidly for a few seconds.
2) Drain chicken into a colander, pour butter back into the pan, add shallots cover with a lid and allow cooking gently till tender, drain the fat, adding wine and reducing to 1\3.
3) Add cream and reduce to 1\4, add lemon juice and chicken strips, do not reboil, correct seasoning, serve hot, sprinkled with parsley, accompanied by rice.
