ROULADE OF CABBAGE

Method:
1 Cut the leaves from the cabbage, reserving the innermost part for a soup. Blanch the
leaves , a few at a time in a large pan of boiling salted water for 4-5 minutes. Refresh
under cold water. Spread the leaves out on a clean towel to dry.
2 In a mixing bowl, combine the chopped assorted vegetables, parsley, and parmesan
cheese. Season with nutmeg, salt and pepper to taste.
3 Divide large cabbage leaves in half, discarding the rib. Lay the leaves on a flat surface
, put the stuffing in it and make sausage shape.
4 In a large pan big enough to keep all the rolls in one layer, heat olive oil, put the rolls
turning them with a large spoon as they begin to cook.serve it hot
