METHOD:- | ||
1. Wash the tomatoes and cut into small size. | ||
2.roughly cut of carrot. Onion and celery | ||
3.take little butter in degchi and add carrot,onion,celery | ||
and bouqet garni and cooked for few second. | ||
4. add chopped tomatoes,stir,covered and cooked for few | ||
minutes or sweat | ||
5.add vegetable stock and simmer fo 20 minuites | ||
6.blend tomatoes mixture and make puree and strain | ||
7. make roux--add into the mixture and simmer. | ||
8.check correct seasoning. | ||
9.soup finish with cream and served with crouton. | ||
10. top with cream and served hot | ||
