FRENCH ONION SOUP

1 | Chicken stock | 500 ml |
2 | White wine | 50ml |
3 | Swiss cheese | 1 slice |
4 | Onions | 4 nos |
5 | Olive oil | 3 tbs |
6 | Garlic | 2 cloves |
7 | Flour | 2tbs |
8 | Thyme, bay leaf | Bouquet garni |
9 | Butter | 3tbs |
10 | French bread | For croutons |
11 | Seasoning | To taste |
Method:
1) Heat oil in a pan and fry the sliced onion over low heat, till tender.
2) Sprinkle flour cook till brown, add white wine and stock, and bring it to boil.
3) Add bouquet garni, reduce heat and simmer for about 20 minutes, season to taste.
4) Prepare croutons in oven, spoon the soup into oven proof soup bowls, cover with croutons, cover croutons with cheese, put inside oven till cheese melts, 200° c for about 5-10 minutes.
5) Whole eggs can be used in French onion soup.
