1 | Chicken liver | 150gms |

4 | Egg | 1 |
5 | Butter | 50gms |
6 | Paprika | 1tbs |
7 | Nutmeg | 1 pinch |
8 | Chicken stock | 2lts |
Method:
1) Cut liver into dices, sauté briskly on high flame after seasoning with salt and pepper.
2) Braise onions in butter; pass this mixture thru the blender with the egg, butter, seasoning, nutmeg and paprika, then ad parsley.
3) Shape into small dumplings and simmer in stock for 15 minutes, prepare consommé and serve garnished with dumplings.
