Method:

 

Select good sized potato and allow one potato per portion.

Wrap the potatoes in a aluminum foil.

Scrub well make 2 mm deep incision round the potato.

Place on a bed of salt on a tray in a hot oven at 230°c-250°c for about 1 hour. Turn the potato after every 30 minutes.

Place the butter in the centre and sprinkle salt and pepper and serve.
