Lemon Risotto

Method:

 

1) Prepare white chicken stock, bring to boil, and then let it simmer.

 

2) Heat oil in a pan, add onion and wine, cook for 5-6 minutes or till translucent.

 

3) Add rice and stir, cook for 2-3 min, slowly add one cup of stock to the rice, stir constantly and vigorously.

 

4) When stock is mostly absorbed, small craters form, add another cup of stock to the rice, stir and bring back to simmer.

 

5) Continue adding remaining stock, stirring after each addition.

 

6) After all stock is consumed keep stirring until liquid is absorbed and rice is creamy.

 

7) Combine lemon zest, lemon juice in a bowl and stir this mixture into the rice, finish with cheese and serve.
