POTATO CROQUETTES

Method:
1 Beat the egg yolks into the mashed potatoes.
2 Seasoned with salt, black pepper and a little grated nutmeg.
3 Spread out the mixture on a floured board.
4 When the mixture is cool, divide into 10-12 equal parts and form these into croquettes.
5 Coat each croquette with the beaten egg white and then the bread crumb.
6. Heat the oil and fry the croquettes until golden, turning on all sides.
7 Drain on paper towels, serve as soon as possible.
