Spaghetti Bolognaise

METHOD:

1 Place 10gm butter or oil in a sauté pan.

2 Add the chopped onion and garlic and cook for 4-5 minutes without coloring.

3 Add the minced mutton and cook, coloring slightly.

4 Add the demi-glaze, the tomato puree and the herb.

5 Simmer till tender.

6 Meanwhile cook the spaghetti in plenty of boiling water.

7 Allow to boil gently and stirring occasionally with a wooden spoon.

8 Cook for approximately 12-15 minutes, drain well in a colander.

 9 Return to a clean pan containing 10gms butter.

10 Correct the seasoning.

11 Serve with the sauce in a centre of spaghetti.

12 Serve grated cheese on top.
