Tomato & Mozzarella Toasts
These resemble mini pizza& are good with drinks before a dinner party. Prepares them in several hours in advance& pop them in the oven just as your guest arrives

Serves= 6-8 Portions
Variation
Use red or green pesto instead of the sun dried tomato paste- a combination of colors is especially effective if the toasts are served on a large platter.
Method:-
Cut each French bread on the diagonal into 12-15 slices, discarding the ends. Toast lightly on both side.
Preheat the oven to 220degree Celsius. Spread sun-dried tomato paste on one side of each slice of toast. Cut the mozzarella into small pieces & arrange over the tomato paste.
Put the toast on the baking sheet, sprinkle with herbs & pepper to taste & drizzle with oil. Bake for 5 minutes or until the mozzarella has melted & is bubbling. Leave the toast to settle for a few minutes before serving.
